This version uses a lean blend of ground beef and ground turkey to keep calories and fat lower without sacrificing taste. Breadcrumbs, an egg and a little beef broth help bind the patties and keep them tender. The mushroom gravy is thickened with a bit of flour and enriched with tomato paste, Worcestershire sauce and a touch of red wine vinegar for balance. The result is a hearty, homey dish that freezes well—make double and keep a portion for an easy second dinner.

If you like classic comfort food, this Salisbury Steak is a great addition to your weeknight rotation. It’s family-friendly and appeals to picky eaters and adventurous diners alike. Leftovers reheat nicely and the flavors deepen after a day in the refrigerator.

What is Salisbury Steak?

Salisbury Steak originated as an economical way to enjoy “steak” when whole cuts were expensive or hard to find. Ground beef was seasoned and shaped into patties that resembled a steak and were often served with a rich gravy. Over time it became a staple of home cooking and diners across America. Today’s versions often update the original by using leaner meats, fresh mushrooms and simple pantry staples to create a healthier, homemade comfort dish.

This recipe is a modern, lighter take that still gives you the deep, savory flavors associated with the classic dish. The mushroom gravy adds earthiness while the tomato paste and Worcestershire sauce round out the savory profile.

Recipe: Salisbury Steak with Mushroom Gravy

Yield: 8 servings
Serving size: 1 patty with mushroom gravy
Prep time: 10 minutes · Cook time: 35 minutes · Total time: 45 minutes

Ingredients

  • 1 1/2 tsp oil
  • 3/4 cup onions, minced
  • 1 lb 93% lean ground beef
  • 1 lb 93% lean ground turkey
  • 1/2 cup unseasoned breadcrumbs (or gluten-free crumbs)
  • 1 large egg
  • 1 large egg white
  • 2 cups beef broth, divided
  • 1/4 tsp kosher salt
  • 1/8 tsp ground black pepper, or to taste
  • 8 oz sliced mushrooms
  • 2 tbsp all-purpose flour (or gluten-free flour blend)
  • 2 tbsp tomato paste
  • 1 tsp red wine vinegar
  • 2 tsp Worcestershire sauce, or to taste
  • 1/2 tsp mustard powder
  • 1/4 cup water
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat the oil in a skillet over medium heat. Sauté the minced onions until they are golden brown, about 5 minutes. Remove half of the onions and set aside for the patties.
  2. In a large bowl, combine the ground beef, ground turkey, breadcrumbs, egg, egg white, 1/4 cup of the beef broth, the reserved sautéed onions, kosher salt and ground black pepper. Mix gently until just combined. Shape the mixture into eight oval patties.
  3. In a large deep skillet over medium-high heat, brown the patties on both sides, about 4–5 minutes per side. Work in batches if necessary to avoid overcrowding. Transfer the browned patties to a plate and set aside.
  4. Add the sliced mushrooms to the skillet and season with a pinch of salt and pepper. Sauté the mushrooms for 2–3 minutes until they begin to soften and release their juices.
  5. Return the patties to the skillet nestling them among the mushrooms.
  6. In a small bowl, whisk the flour into the remaining beef broth until smooth. Add the remaining sautéed onions, tomato paste, red wine vinegar, water, Worcestershire sauce and mustard powder. Stir to combine and pour the mixture over the patties and mushrooms.
  7. Reduce the heat to low, cover the skillet and simmer for 20 minutes, stirring gently once or twice, until the gravy has thickened and the patties are cooked through.
  8. Adjust seasoning to taste. Garnish with chopped parsley if desired and serve hot over mashed potatoes, mashed cauliflower, egg noodles or a bed of rice.
