This post shares Week 47 of the Skinnytaste Dinner Plan. I’m away in Park City, Utah until Sunday, but I planned my dinners for the week in advance and ordered groceries online through Peapod—a true lifesaver when traveling. Planning ahead makes staying on track with healthy, home-cooked meals much easier, even during a busy week.

I use The Skinnytaste Meal Planner to map out dinners for the week, but any planner or a simple list will work. Meal planning reduces stress, saves time, and helps control food waste. My breakfasts are usually quick and simple — eggs with fruit, a smoothie, or avocado toast. We’re a family of four, so if a recipe yields extra portions, those become lunches or leftovers for another night. Tips for a Smooth Week
- Order groceries online when you’re short on time or traveling; scheduling delivery or pickup makes it easy to stick to your plan.
- Prep what you can in advance: chop vegetables, wash greens, and portion proteins. Little prep steps cut evening cooking time significantly.
- Batch cook and repurpose leftovers. Extra meatballs, chicken, or roasted veggies can be lunch bowls or quick wraps the next day.
- Swap ingredients to suit dietary needs. For example, use Tamari instead of soy sauce for a gluten-free option and substitute different vegetables based on what’s in season or on sale.
- Use a spiralizer for zucchini zoodles or buy pre-spiraled vegetables to save time. Lightly sautéed zoodles are a fast, lower-carb side for saucy dishes.
- Keep staples on hand—eggs, canned tomatoes, beans, spices, and frozen vegetables—to make weeknight cooking flexible and reliable.
- Scale recipes to match your household size. For a family of four, leftovers are great for lunches; for fewer people, halve recipes or freeze portions for later.
