Skillet Cajun Spiced Fish with Tomatoes
I used flounder in this version, but any firm, white, flaky fillet will work beautifully — think sole, cod, halibut or striped bass. In the summer, when fresh striped bass is available after a day of fishing, this is one of my go-to preparations. The tomato-based sauce cooks quickly on the stove and infuses the fish with bright, savory flavor. Serve with crusty bread, brown rice, or quinoa to soak up the sauce for a complete meal.

Ingredients
- 1 tsp olive oil
- 4 fillets, about 6 ounces each, white fish (flounder, fluke, tilapia, cod)
- 3/4 cup onion, chopped
- 2 cloves garlic, minced
- 3/4 cup diced green bell pepper

Instructions
- Heat a deep skillet over medium heat and add the olive oil. Sauté the chopped onion and minced garlic for several minutes, until the onion is soft and translucent.
- Add the diced green bell pepper and chopped tomatoes to the skillet. Stir in the Cajun seasoning, salt and pepper. Cook, stirring occasionally, until the tomatoes begin to soften and release their juices, about 2–3 minutes.
- Nestle the fish fillets into the tomato mixture, spooning a little sauce over the top. Reduce heat to medium-low, cover the skillet, and cook until the fish flakes easily with a fork, about 12–15 minutes depending on thickness.
- Carefully transfer the fillets to plates and spoon the tomato-pepper sauce over them. Serve immediately with crusty bread, brown rice, quinoa or a green salad.
Notes
Canned diced tomatoes can be used in place of fresh tomatoes when needed; fresh tomatoes give a brighter flavor but canned works well year-round. Adjust seasoning and heat level to your preference.
