Ingredients

  • 2 tsp olive oil

Instructions

  1. Season the chicken: combine 3/4 tsp salt, 1 tsp cumin, 1/2 tsp paprika, 1/4 tsp chili powder and 1/4 tsp garlic powder. Toss the chicken pieces in the spice mix until evenly coated.
  2. Heat 1 tsp olive oil in a large deep nonstick skillet over high heat. When the oil is very hot, add the chicken and cook, stirring occasionally, until browned and cooked through, about 5–6 minutes. Transfer the chicken to a plate and set aside.
  3. Reduce the heat to medium, add the remaining 1 tsp olive oil to the skillet. When hot, add the sliced onion and bell peppers. Sprinkle with the remaining 1/2 tsp cumin, 1/2 tsp paprika, 1/4 tsp chili powder, 1/4 tsp garlic powder and 1/4 tsp salt. Cook, stirring occasionally, until the vegetables are soft and beginning to brown, about 8–10 minutes.
  4. Add the minced garlic and cook for about 30 seconds until fragrant.
  5. Remove the vegetables from the pan and set them with the chicken.
  6. In the same skillet, pour in the chicken broth, the can of diced tomatoes with green chiles, and the uncooked pasta. Stir to combine and bring to a boil. Cover, reduce heat to medium-low and simmer for about 15 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  7. Return the cooked chicken and vegetables to the skillet and stir until everything is heated through, about 2 minutes.
