These savory stuffed sweet potatoes are given an Italian twist with marinara, Parmesan and melted mozzarella. They’re a quick, healthy vegetarian meal that’s easy to prepare and full of flavor.
Stuffed Sweet Potatoes — Italian Style
Roasted or microwaved sweet potatoes make an excellent base for hearty toppings. In this version, baked sweet potatoes are filled with marinara and Italian seasoning, finished with Parmesan and broiled mozzarella. The dish is balanced with a simple arugula salad on the side for peppery contrast and brightness.

Why this works
Sweet potatoes offer a naturally sweet, creamy interior that pairs well with savory Italian flavors. The tang of marinara and sharpness of Parmesan cut through the sweetness, while the melted mozzarella adds richness. A simple dressed arugula salad completes the plate with fresh, peppery notes.
Quick cooking option
If you’re short on time, you can microwave the sweet potatoes instead of roasting. Prick each potato several times with a fork, then microwave on high for 8–10 minutes, turning once, until tender. Roasting will give a deeper caramelized flavor, but the microwave works well for a fast weeknight meal.
What toppings to try
To contrast the natural sweetness, savory and spicy toppings work best. Ideas include:
- Turkey chili or bean chili
- Taco-spiced ground meat or seasoned roasted vegetables
- Black beans with salsa and shredded cheese
- Italian-style toppings: marinara, herbs, toasted pine nuts

Yield: 4 servings
Serving size: 1 sweet potato with 1 cup salad
Prep: 10 mins | Cook: 50 mins | Total: ~1 hour
Ingredients
For the sweet potatoes
- Cooking spray or a light brush of oil
- 4 medium sweet potatoes (about 7 ounces each)
- 1/2 cup marinara sauce, divided
- 1/4 cup freshly grated Parmesan cheese
- 4 ounces part-skim mozzarella, thinly sliced (about 1 ounce per potato)
- 10 fresh basil leaves, chopped, for garnish
- Kosher salt and freshly ground black pepper, to taste
- Red pepper flakes and pine nuts, optional
For the salad
- 4 cups baby arugula
- 2 teaspoons good-quality balsamic vinegar
- 2 teaspoons extra-virgin olive oil
- Pinch kosher salt and freshly ground black pepper
Instructions
- Preheat the oven to 425°F (220°C). Line a large sheet pan with foil and lightly spray or brush with oil. Position the oven rack in the second-highest slot.
- Prick each sweet potato several times with a fork. Place them on the prepared sheet pan and roast for about 45 minutes, until they are tender when pierced with a knife.
- Remove the potatoes from the oven and carefully slice each one open lengthwise. Allow the steam to escape, then use a fork to mash the flesh slightly to create a cavity for the toppings.
- Divide the marinara sauce evenly among the four potatoes. Add 1 tablespoon of grated Parmesan to each potato along with a pinch of salt and pepper, and gently mix it into the sweet potato flesh.
- Switch the oven to broil (high). Top each potato with about 1 ounce of sliced mozzarella and broil 3–4 minutes, watching closely, until the cheese bubbles and develops light brown spots.
- While the potatoes broil, toss the arugula in a medium bowl with the balsamic vinegar, olive oil, and a pinch of salt and pepper.
- Arrange the salad on four plates or shallow bowls. Place a stuffed sweet potato on top of each salad. Garnish with chopped basil, pine nuts and red pepper flakes if using. Serve immediately.
Tips and variations
- For a vegan option, use dairy-free cheese and omit the Parmesan or substitute with nutritional yeast.
- To add more protein, top with cooked chickpeas, white beans, or shredded rotisserie chicken.
- Toast pine nuts in a dry skillet over medium heat for 2–3 minutes until golden and fragrant—watch carefully to prevent burning.
- Leftovers store in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven until warmed through, or microwave until hot, then broil briefly to refresh the cheese topping.
