Skinnytaste Dinner Plan — Week 83
This week’s Skinnytaste dinner plan features a new addition: Lomo Saltado, a flavorful Peruvian beef stir-fry. If you haven’t tried it, I highly recommend giving it a go. You can easily swap chicken for beef if you prefer a lighter option or want to stretch servings. It’s my anniversary week, so we’ll be dining out on Saturday, and for the rest of the week I’m keeping dinners straightforward while testing a few new recipes I’ll share soon.
The photo above shows the meal planner I use to organize weeknight dinners. Meal planning is one of the best ways to streamline grocery shopping, reduce food waste, and make weeknight cooking less stressful. My breakfasts are usually quick and simple—eggs with fruit, a smoothie, or avocado toast—so I focus planning energy on dinners. We’re a family of four, so when recipes yield extra portions those meals become packed lunches or leftover dinners for the following day.

Tips for success: check your pantry first for staples like olive oil, garlic, salt, and basic spices to avoid duplicate purchases. If a recipe yields extra portions, plan them as lunches or a dinner the next day—leftovers are a big time-saver. For lighter variations, use chicken in place of beef in the Lomo Saltado or swap pasta for spiralized zucchini in the lasagna rolls. Adjust seasonings and heat (jalapeño, red pepper flakes) to suit your family’s taste.
