Cauliflower Rice Chicken Biryani

If you enjoy Indian flavors but want a lighter, faster meal, this cauliflower rice Chicken Biryani is a great choice. It keeps the aromatic spices and bright lemon notes of classic biryani while simplifying the technique so the whole meal is ready in about 30 minutes. Tender spiced chicken breast pairs with cauliflower rice and sautéed onions, and a few fresh herbs finish the dish for a satisfying, well-balanced plate.

Inspired by the popular Indian or Persian dish, Chicken Biryani, only streamlined to make quick, easy and low carb. By replacing the rice with riced cauliflower, it's also Keto and Whole30 friendly.

This skillet version is streamlined and approachable: instead of long simmer times, the chicken is quickly browned and then combined with cauliflower rice that is cooked just until tender. The result is a fragrant, slightly spicy dish with plenty of texture and bright acidity from lemon juice. Because it uses simple pantry spices—garam masala, turmeric, chili powder, ginger and garlic—you’ll get authentic flavor without complicated prep.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
  • 2 teaspoons kosher salt, divided
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 1 teaspoon garam masala, divided
  • 3/4 teaspoon ground turmeric, divided
  • 1/4 teaspoon chili powder
  • 1 tablespoon fresh lemon juice
  • 3 teaspoons clarified butter (ghee), divided
  • 1 large yellow onion, diced
  • 1 to 2 hot green chilies, sliced (adjust to taste)
  • 6 cups cauliflower rice (fresh or frozen)
  • 1/4 cup chopped cilantro, for garnish
  • Lemon wedges, for serving

Instructions

  1. Season the chicken with 1 teaspoon salt, the grated ginger, minced garlic, 1/2 teaspoon garam masala, the chili powder, 1/4 teaspoon turmeric and the lemon juice. Toss to coat evenly and let sit while you heat the skillet.
  2. Heat a large skillet over high heat and add 1 teaspoon ghee. Add half of the chicken and cook until browned and cooked through, about 5 minutes, stirring once or twice. Remove the cooked chicken and set aside.
  3. Repeat with the remaining teaspoon of ghee and the remaining chicken. Transfer the second batch of cooked chicken to the plate with the first.
  4. Add 2 teaspoons ghee to the skillet, reduce the heat to medium-high and add the diced onion. Cook, stirring occasionally, until the onion turns golden, about 3 to 4 minutes.
  5. Add the sliced green chili, the cauliflower rice, the remaining 1 teaspoon salt, 1/2 teaspoon garam masala and 1/2 teaspoon turmeric. Stir to combine.
  6. Cook the cauliflower rice mixture, stirring occasionally, until the cauliflower is tender and heated through, about 6 minutes (if using frozen rice, cook a little longer to remove extra moisture).
  7. Return the cooked chicken to the skillet and stir to combine. Taste and adjust seasoning if needed.
  8. Garnish with chopped cilantro and serve with lemon wedges for squeezing over the top.

Tips and variations

  • If you prefer more heat, keep the seeds in the green chilies or add a pinch of cayenne. For milder flavor, omit the chilies.
  • Swap chicken breast for thigh meat if you want a juicier result; adjust cooking time as needed until cooked through.
  • For extra aroma, stir in a small pinch of ground cumin or a few crushed roasted cardamom pods when cooking the onions.
  • If using frozen cauliflower rice, thaw and drain any excess liquid before cooking to avoid sogginess.

Storage and reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm gently in a skillet over medium heat with a splash of water or a little ghee to restore moisture, or microwave until heated through. This dish also freezes reasonably well—seal in a freezer-safe container for up to 1 month and thaw overnight in the refrigerator before reheating.

Yield and serving size

Yield: 4 servings. Serving size: about 1 three-quarter cup per person. This makes a balanced main course when paired with a simple side salad or steamed vegetables.
