  2. Toast the fennel: Add fennel seeds and cook briefly until fragrant, about 1 minute. Transfer the mixture to a bowl to cool slightly.
  3. Combine: In a large bowl mix the ground meat, red wine vinegar, fresh thyme and sage, paprika, a pinch of sugar, nutmeg, cayenne (if using), remaining salt and pepper with the cooled onion mixture until evenly combined.
  4. Shape patties: Form the mixture into eight even patties and place them on parchment or wax paper. Patties can be refrigerated or frozen at this stage for later cooking.
  5. Brown: Spray a nonstick skillet with oil and heat over medium-low. Cook patties in batches, about 3 minutes per side, until well browned.
  6. Finish: After browning, reduce heat to low, cover and continue cooking until the internal temperature reaches 165°F (74°C). Remove and serve or cool and store.
