Ingredients
For the beef
- 3 to 4 lb beef round roast, trimmed
- 1 tbsp minced garlic
- 1 tbsp fresh rosemary (or 1 tsp dried)
- 1 tbsp fresh thyme (or 1 tsp dried)
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 2 to 3 (14.5 oz) cans low-sodium beef broth
- 1 tsp Worcestershire sauce
- 10 whole peppercorns
- 1 bay leaf
- 1/2 large onion, cut into chunks
For the caramelized onions (about 1 cup)
- 1/2 tablespoon extra-virgin olive oil
- 3 large onions, thinly sliced
- 1/2 tsp kosher salt
For the peppers (optional, about 2 cups)
- 1 large red bell pepper, cored, seeded and sliced into strips
- 1 large green bell pepper, cored, seeded and sliced into strips
For the sandwiches
- Reduced-fat provolone or mozzarella slices
- Whole wheat baguettes or rolls, cut into pieces (about 2 oz per sandwich)
Instructions
- In a small bowl, combine the minced garlic, rosemary, thyme, kosher salt and black pepper. Rub this mixture all over the roast.
- Place the roast in the slow cooker. Pour the beef broth around the roast (not directly over the herb rub) and add the chopped onion to the cooker.
- Add the Worcestershire sauce, whole peppercorns and the bay leaf to the broth. Cover and cook on low until the meat pulls apart easily with a fork, about 9 to 12 hours depending on the size of your roast.
- About an hour before the roast is done, prepare the onions and peppers. Heat 1/2 tablespoon olive oil in a large nonstick skillet over medium heat. Add the sliced onions and 1/2 teaspoon kosher salt and cook, stirring often, until they become deep golden and sweet, about 30–35 minutes. Reduce the heat if they begin to brown too quickly and add a tablespoon of water if the pan becomes very dry.
- Once the onions are caramelized, transfer them to a bowl. Add the sliced peppers to the same skillet and cook, stirring often, until they are soft and slightly charred, about 8–10 minutes.
- When the roast is finished, remove it to a cutting board and shred with two forks or slice thinly, depending on preference.
- Strain the cooking liquid through a fine sieve to remove solids, then skim fat from the surface. Reserve the strained liquid as au jus. Portion about 1/4 cup of broth per serving into small ramekins for dipping.
- Preheat the oven broiler. Split each piece of bread, pile with about 2 oz of shredded beef, top with caramelized onions, peppers (if using) and a slice of cheese. Broil briefly until the cheese melts and the edges of the bread are golden.
