
I hope you’re enjoying the weekend. I’m excited for April and the fresh start a new month brings—new goals, renewed focus, and a little spring cleaning around the site. The blog has a fresh redesign by Purr Designs, which includes a cleaner index and improved navigation to help you find recipes and meal plans faster. I also recently moved my email newsletter to Mailchimp; if you used to receive recipes by email and no longer do, please check your spam or promotions folder to make sure you haven’t missed anything.
On the wellness front, I’m shaking up my workout routine. I tried a TRX class at Beach Fit and got an incredible full-body workout—I’m still feeling it two days later—so I plan to keep that in rotation. This week is a short meal-planning week for me because I’m traveling to Charleston, SC for the final part of the cookbook shoot for Skinnytaste Fast and Slow. I’m photographing with Helene Dujardin, collaborating with the talented food stylist Running With Tweezers, and working with prop stylist Kim Phillips. The images are coming together beautifully, and I can’t wait to share the finished book with you.

This post marks Week 23 of sharing my weekly dinner plans. Pictured above is The Skinnytaste Meal Planner where I map out dinners for the week, though you can use any planner that works for you. Meal planning is one of the simplest ways to save time, reduce stress, and cut down on food waste: decide what you’ll make, check your pantry, and shop once with a focused list. My breakfasts are usually quick—eggs with fruit, a smoothie, or avocado toast—so I tend to plan dinners and lunches more intentionally. We are a family of four; if a recipe yields extra portions, it becomes packed lunches or easy leftovers for the next day, which makes weekday evenings smoother.
