Turkey Burgers with Broccoli Rabe

These Broccoli Rabe Turkey Burgers are packed with savory, slightly bitter greens and a touch of Pecorino for an easy, flavorful weeknight meal. I skipped the bun and served mine on lettuce leaves topped with sautéed broccoli rabe, but they are equally delicious on a slice of focaccia or a whole-grain roll.

I enjoy light, bun-less turkey burgers for lunch and these are a favorite when I want something a little different. The slightly bitter, leafy flavor of broccoli rabe pairs wonderfully with garlic, red pepper flakes and salty Pecorino Romano. The idea came from a chicken broccoli rabe sausage I tried; I experimented with both ground chicken and ground turkey and preferred the texture and flavor of the turkey in this recipe.

To make these patties, chop a portion of the broccoli rabe into very small pieces and mix them into the ground turkey along with grated Pecorino and crushed garlic. The remaining broccoli rabe is blanched and then sautéed with garlic and a bit of olive oil to finish the dish. Serve the burgers on lettuce leaves topped with a slice of tomato and the sautéed greens, or place them on your favorite bread for a heartier sandwich.

Ingredients

For the broccoli rabe

  • 1 bunch (about 20 oz) broccoli rabe, washed, stems trimmed
  • 1 tablespoon olive oil
  • 3 cloves garlic, sliced thin
  • Kosher salt, to taste
  • 1/4 teaspoon crushed red pepper flakes

For the patties

  • 1 lb 93% lean ground turkey
  • 3 tablespoons freshly grated Pecorino Romano cheese
  • 1 garlic clove, crushed
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • About 3/4 cup chopped broccoli rabe leaves and flowerettes, very finely chopped (from the bunch above)

To serve

  • 4 large slices tomato
  • 4 large lettuce leaves (or buns, focaccia, rolls)
  • Additional grated Pecorino Romano, optional

Instructions

  1. Separate the broccoli rabe. Chop about 3/4 cup of the tender leaves and flowerettes very finely—these will go into the patties. Cut the remaining broccoli rabe into 2-inch pieces for blanching and sautéing.
  2. Bring a large pot of salted water to a rolling boil. Add the broccoli rabe pieces and blanch for 1 1/2 to 2 minutes. Drain well in a colander and let it sit while you prepare the patties.
  3. In a medium bowl, combine the ground turkey, the 3/4 cup finely chopped broccoli rabe, grated Pecorino Romano, crushed garlic clove, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper and red pepper flakes if using. Mix gently until just combined—avoid overworking the meat.
  4. Form the mixture into four even patties. Refrigerate the patties while you finish the greens and heat the cooking surface.
  5. Heat a large, deep sauté pan or skillet over medium-high heat. Add 1 tablespoon olive oil and the sliced garlic; cook until fragrant and golden, about 1 minute—be careful not to burn the garlic.
  6. Add the blanched broccoli rabe to the pan with the garlic and toss to coat. Season with about 1/4 teaspoon salt and the crushed red pepper. Cook for 2–3 minutes, stirring, until heated through and tender. Remove from heat and reserve.
  7. In a separate hot skillet or on a griddle, cook the turkey patties over medium-high heat for about 6–7 minutes per side, or until they reach an internal temperature of 165°F (74°C) and are cooked through. Cooking times will vary slightly with patty thickness.
  8. To serve, place a large lettuce leaf on each plate (or prepare buns). Top with a slice of tomato, the cooked turkey patty and a generous spoonful of the sautéed broccoli rabe. Add extra grated Pecorino Romano if desired.
