How To Make Banh Mi Bowls

The method is simple and mostly hands-off. Season the pork, add the sauce ingredients, and cook on low in a slow cooker until the meat is fall‑apart tender. While the pork cooks, whisk the pickling liquid and soak the carrots and radishes for about 30 minutes, then drain and chill. When pork is ready, shred it, reserve some of the cooking sauce, and use it to dress the bowls. Layer warm rice, shredded pork, a drizzle of sauce, shredded cabbage, pickled vegetables, cucumber, jalapeño slices and cilantro.

Detailed Instructions

  1. Season pork tenderloin with kosher salt and freshly ground pepper. Place the pork in the slow cooker.
  2. In a small bowl, combine crushed garlic, sliced jalapeño, reduced‑sodium soy sauce (or tamari), and brown sugar. Stir until the sugar dissolves. Pour this mixture over the pork. If your slow cooker runs hot, add 1/4 cup water to prevent drying.
  3. Cover and cook on LOW for about 6 hours, until the pork is very tender. Optionally turn the pork once halfway through cooking. When done, shred the pork with two forks and reserve the cooking sauce to drizzle over bowls.
  4. While the pork cooks, make the quick pickles: in a medium glass bowl, whisk together distilled white vinegar, sugar and kosher salt until dissolved. Add shredded carrots and matchstick radish (or daikon) and let sit about 30 minutes. Drain well and refrigerate until ready to use.
  5. To assemble bowls: divide 3/4 cup cooked brown rice among four bowls. Top each bowl with about 2½ ounces shredded pork and drizzle roughly 2 tablespoons of the reserved sauce over the meat. Add 1/4 cup shredded red cabbage, 1/4 cup pickled carrots, 1/4 cup sliced cucumber, jalapeño slices to taste, and a sprinkle of cilantro leaves. If desired, finish with a spoonful of sriracha mayo or your favorite spicy sauce.
