Loaded Turkey Santa Fe Baked Potato Skins

These baked potato skins are quick to prepare and full of bold Southwestern flavors. The turkey filling is lightly spiced with cumin and brightened with cilantro and tomatoes, while pickled serrano (or jalapeño) adds a lively kick. They’re a great option when you want a lighter, protein-packed appetizer that still feels indulgent.

I like to double the filling because it keeps well and can be used for breakfast with eggs, wrapped in tortillas for a simple lunch, or even folded into enchiladas. Make the potatoes and filling a day ahead and finish them in the oven right before serving for the easiest entertaining solution.

The recipe uses jarred pickled serrano peppers for convenience—one little pepper goes a long way and adds the exact amount of heat I want. If you prefer milder flavors, swap in a seeded jalapeño or omit the pepper entirely. These potato skins are naturally gluten-free; to make a vegetarian version, skip the turkey and increase the black beans and corn or add a textured vegetable protein.

Loaded Turkey Santa Fe Baked Potato Skins – Recipe

Yield: 14 loaded skins • Serving size: 1 loaded skin

Prep: 10 mins • Cook: 55 mins • Total: 1 hr 5 mins

Ingredients

  • 7 medium russet potatoes (approx. 32 oz), washed and dried*

For the filling:

  • 1/2 lb 99% lean ground turkey
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup frozen corn
  • 1 hot pickled serrano pepper, chopped (or jalapeño)
  • 1 large tomato, diced
  • 1 clove garlic, minced
  • 2 tbsp chopped onion
  • 2 tbsp chopped cilantro, plus more for garnish
  • 1 tsp ground cumin
  • Kosher salt to taste

For the topping:

  • 14 tbsp reduced-fat shredded cheese (about 1 tbsp per skin; Mexican blend suggested)
  • Nonstick spray
  • 1/4 cup chopped scallions
  • Reduced-fat sour cream or fat-free Greek yogurt (optional)

Instructions

  1. Pierce each potato several times with a fork. Microwave on high about 5 minutes per potato (adjust time for size and microwave power). Allow potatoes to cool until easy to handle.
  2. Cut each potato in half horizontally. Scoop out the flesh, leaving about a 1/4-inch-thick shell. Reserve the scooped potato for another use (mashed potatoes, soups or breakfasts).
  3. In a large skillet, brown the ground turkey and season with salt.
  4. When the turkey is cooked through, add the chopped onion, minced garlic, black beans, cilantro, chopped serrano, diced tomato, and cumin. Stir to combine.
  5. Cover and simmer on low for 20 minutes, stirring occasionally.
  6. Remove the lid, add the corn, and simmer an additional 5–10 minutes, or until excess liquid has reduced.
  7. Preheat the oven to 450°F (230°C). Lightly spray both sides of the potato skins with nonstick spray and place them on a foil-lined baking sheet. Season with salt and pepper and bake for 10 minutes to crisp the skins.
  8. Remove the skins from the oven. Fill each with about 1/4 cup of the turkey mixture, top with 1 tbsp shredded cheese, and return to the oven for 5 minutes or until the cheese melts.
  9. Top with a dollop of reduced-fat sour cream or fat-free Greek yogurt, sprinkle with chopped scallions and extra cilantro, and serve warm.

Tips & Variations

  • Make-ahead: Prepare the potato shells and filling a day in advance. Reassemble and bake just before serving so skins stay crisp.
  • Vegetarian option: Replace turkey with extra black beans, corn, diced peppers, or a plant-based ground “meat” alternative.
  • Mild heat: Use a seeded jalapeño or omit the pickled pepper if you prefer less spice.
  • Leftovers: Store assembled but unbaked skins or leftover filling in an airtight container in the refrigerator for up to 3 days.
