Ingredients

  • 8 cups chopped romaine lettuce
  • 1/2 English cucumber, peeled and diced in large chunks
  • 1/3 cup Feta cheese, crumbled
  • 1/8 small red onion, sliced lengthwise (use more or less to taste)
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 1/2 tablespoons fresh chopped dill
  • 1/2 teaspoon kosher salt, or to taste
  • Fresh black pepper, to taste

Instructions

  1. In a large bowl, combine the chopped romaine, diced cucumber, sliced red onion and crumbled Feta.
  2. In a small bowl or jar, whisk together the olive oil, red wine vinegar, chopped dill, kosher salt and several grinds of black pepper until the dressing is emulsified.
  3. Pour the dressing over the salad and toss gently to coat all the ingredients.
  4. Serve immediately to keep the lettuce crisp. If preparing ahead, keep the dressing separate and toss just before serving.
