  • 1 (4 oz) can diced green chiles
  • 3/4 cup canned black beans, drained and rinsed
  • 3/4 cup fresh or frozen thawed corn
  • 1/4 cup chopped fresh cilantro, plus 2 tbsp for garnish
  • 1 1/2 cups part-skim shredded Mexican cheese blend, divided*
  • 1 medium (about 4 oz) Haas avocado, diced
  • 2 tbsp chopped scallions

Instructions

  1. Preheat the oven to 400°F and lightly spray a 9 x 12 baking dish with cooking spray or oil.
  2. In a medium saucepan, cook the quinoa with 1 3/4 cups of the broth following package directions; when done, fluff with a fork and set aside.
  3. While the quinoa cooks, heat the olive oil in a small saucepan over medium-low heat. Add the crushed garlic and sauté until fragrant and lightly golden, about 1–2 minutes.
  4. Add the tomato sauce, 1/4 tsp kosher salt, cumin, 1/4 cup broth and the chipotle en adobo. If the sauce seems too thick, stir in 1–2 tbsp water to reach the desired consistency. Bring to a boil, then reduce heat and simmer 3–4 minutes to meld flavors.
  5. In a large bowl, combine the cooked quinoa, drained green chiles, corn, black beans and 1/4 cup chopped cilantro. Stir in 1/2 cup of the shredded cheese until distributed.
  6. Spread the quinoa mixture evenly in the prepared baking dish. Pour the enchilada-style sauce over the top and sprinkle with the remaining shredded cheese.
  7. Cover the dish with foil and bake until heated through and the cheese is melted, about 20–25 minutes. Remove foil for the last few minutes if you prefer a slightly browned top.
