How to Make Slow Cooker Lasagna

  1. Brown the meat: In a large skillet, heat a little oil over medium-high heat. Add ground beef and ¾ teaspoon salt and brown, breaking it up as it cooks. Add the onion and garlic and cook until softened.
  2. Make the meat sauce: Stir in crushed tomatoes and ¼ cup water, season with Italian seasoning and the remaining salt. Simmer over medium-low heat for about 20 minutes to meld flavors.
  3. Prepare the filling: In a bowl, combine the cottage cheese, beaten eggs, Parmesan, half the mozzarella, and chopped parsley; mix until well blended.
  4. Layer the lasagna: Spray the inside of a 6-quart slow cooker with oil. Spread about 1 cup of meat sauce on the bottom. Layer three lasagna noodles (break them to fit), top with another cup of sauce, then spread a third of the cheese mixture. Repeat two more times, finishing with the final noodles and remaining sauce.
  5. Cook low and slow: Cover and cook on low for 3½ to 4 hours. Depending on your slow cooker and the noodles, cooking may take up to 6 hours. After about 3 hours, test the center with a knife; if the noodles slide in easily it’s done, otherwise continue cooking 30–60 more minutes.
  6. Finish and rest: When the noodles are tender, sprinkle the remaining cup of mozzarella over the top, cover, and cook 5–10 minutes until melted. Remove the lid and let the lasagna rest 10–15 minutes before slicing so the layers set.

  • 12 regular uncooked lasagna noodles (about 11.25 ounces), not no-boil

Instructions

  1. Spray a large skillet with oil and heat over medium-high. Add the ground beef and ¾ teaspoon salt. Sauté until mostly cooked, then add the onion and garlic and cook until softened, about 2 minutes more.
  2. Add the crushed tomatoes and ¼ cup water to the skillet. Season with Italian seasoning and the remaining ¼ teaspoon salt. Bring to a simmer, reduce heat to medium-low, cover, and simmer 20 minutes. Adjust salt to taste.
  3. While the sauce simmers, combine cottage cheese (or ricotta), beaten eggs, Parmesan, ½ cup mozzarella, and chopped parsley in a bowl. Stir until evenly mixed and set aside.
