Grilled Fennel with Parmesan and Lemon — Recipe

Yield: 4 servings (about 2 slices per serving)

Ingredients

  • 12 oz fennel bulb — 1 large, stalks and fronds removed
  • Olive oil spray (or a light brush of extra virgin olive oil)
  • Kosher salt and freshly ground black pepper, to taste
  • 1/2 tbsp extra virgin olive oil (if not using spray)
  • Juice of 1/2 lemon
  • 1/2 oz Parmigiano‑Reggiano, shaved

Instructions

  1. Stand the fennel bulb on its base and cut it in half vertically, keeping the core intact so the slices hold together.
  2. Slice each half into four 1/4‑inch thick slices, for a total of about eight pieces.
  3. Lightly spray or brush both sides of each fennel slice with olive oil. Season with kosher salt and black pepper to taste.
  4. Heat an outdoor grill, a stovetop grill pan, or a hot cast‑iron skillet over medium‑high heat. If using a pan, lightly spray or oil the surface.
  5. Grill the fennel slices 2–3 minutes per side, turning once, until nicely charred and tender when pierced with a fork.
  6. Transfer the grilled fennel to a serving platter. Drizzle with the remaining olive oil and the juice of half a lemon. Scatter the shaved Parmigiano‑Reggiano over the top.
  7. Serve warm as a side dish or a small warm salad.
