Maple Cranberry Pecan Oat Breakfast Bars

Chewy cranberry pecan oat bars combine toasted pecans and dried cranberries with golden oats, almond butter and pure maple syrup for a sweet, satisfying breakfast or snack. These bars are chewy, full of texture, and made with wholesome ingredients — one bar is substantial enough to be a meal on the go. They are naturally egg-free, dairy-free and vegan, and can be gluten-free when you use certified gluten-free oats.

I make bars like these for easy breakfasts and quick snacks. They travel well, freeze cleanly, and taste rich and wholesome without needing eggs or dairy. I first tried a very similar recipe adapted from the cookbook Power Hungry: The Ultimate Energy Bar Cookbook and have fine-tuned the method to give the best chewy texture and flavor balance. I’ve been eating one each morning and love how filling and flavorful they are.

Toasting the oats and pecans before combining them brings out deeper, nutty flavors, but if you’re short on time you can skip that step. Any mild, unsweetened nut or seed butter will work — almond, cashew or sunflower seed butter are excellent choices. Peanut butter can be used as well, though it may assert a bolder flavor that competes with the maple.

These bars are easy to assemble: toast the dry ingredients, heat the milk and multigrain cereal until thickened, stir in the nut butter and maple syrup, then combine everything and press firmly into a lined pan. Chill until set, then cut into bars. The result is a chewy, slightly sticky bar studded with cranberries and toasted pecans and flavored with warm cinnamon and vanilla.

Storage tips: individually wrap the bars tightly in plastic wrap or wax paper. Keep them at room temperature for up to two days, refrigerate for up to one week, or freeze in an airtight container for up to three months. If frozen, allow bars to thaw at room temperature for about an hour before eating.

Ingredients

  • Cooking spray
  • 2 cups old-fashioned or quick-cooking rolled oats (gluten-free if needed)
  • 1/2 cup chopped pecans
  • 1 cup dried cranberries, chopped (by hand or pulse in a food processor)
  • 1/2 cup unsweetened plain almond milk
  • 1/2 cup multigrain hot cereal (use gluten-free if needed; I used a 10-grain blend)
  • 1 cup natural unsweetened almond butter (or other mild nut/seed butter)
  • 1/2 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/4 tsp fine sea salt
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a 9-inch square baking pan with foil or parchment paper and spray the lining with nonstick spray.
  3. Spread the oats and chopped pecans in an even layer on a large rimmed baking sheet.
  4. Bake for 6 to 8 minutes, shaking or stirring once halfway through, until the oats and nuts are golden and fragrant. Transfer them to a large mixing bowl and add the chopped cranberries.
  5. In a small saucepan over medium heat, bring the almond milk to a boil. Stir in the multigrain cereal and remove from heat; let stand for 2 minutes so the cereal softens and thickens slightly.
  6. Add the nut or seed butter, maple syrup, cinnamon, and salt to the cereal mixture. Return to low heat and cook, stirring, for 6 to 7 minutes until the mixture thickens and comes together. Remove from heat and stir in the vanilla extract.
  7. Pour the warm cereal mixture over the toasted oats, pecans and cranberries. Fold gently until all dry ingredients are evenly coated and combined.
  8. Transfer the mixture to the prepared pan and press down firmly. Use the back of a measuring cup and then a piece of parchment or wax paper laid on top to press and compact the mixture very firmly and evenly across the pan.
  9. Cool completely. Refrigerate at least 1 hour or until the mixture is firm.
  10. Lift the chilled block from the pan using the liner, peel away the foil or parchment, and place on a cutting board. Cut into 16 bars.

Notes & tips

This version is very slightly adapted from the cookbook Power Hungry: The Ultimate Energy Bar Cookbook. For a different shape and bite-size option, the mixture can be rolled into smaller balls to make no-bake energy bites or shaped into cookies. Swap in chopped dried cherries for cranberries, or use pecan halves for a chunkier texture. Peanut butter works but can overpower the maple; choose a milder nut or seed butter if you prefer the maple flavor to shine.
