Waldorf Turkey Salad

Ingredients

  • 80g (⅓ cup) 97% fat-free mayonnaise or gluten-free mayonnaise
  • 2 tsp Dijon mustard or gluten-free mustard
  • Freshly ground black pepper
  • 125g shredded cooked turkey or chicken
  • 1 Granny Smith apple, unpeeled, chopped
  • 1½ cups seedless red grapes, halved
  • 70g (½ cup) chopped walnuts
  • 12 large butter lettuce leaves

Instructions

  1. Combine the mayonnaise, mustard, and pepper in a bowl.
    Add the turkey, apple, grapes, and walnuts. Toss to coat.
  2. Line 4 small plates with 3 lettuce leaves each.
    Divide the salad mixture among the plates. Serve immediately.
