I really love Mediterranean Chickpea Salad. It’s full of flavor from the feta cheese, olives, crunchy cucumbers, and juicy cherry tomatoes. The chickpeas make it filling but still light and fresh. It’s great for meal prep, a quick healthy side, or sharing at parties. This salad is one of my top picks when I want something tasty and healthy with a Mediterranean touch!

Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve chilled or at room temperature.
